In 2010, I was diagnosed with Lupus. Suddenly, I was faced with chronic pain, overwhelming fatigue, and a future that felt entirely out of my control. Desperate for relief and unwilling to accept a life defined by illness, I began researching alternative ways to heal. That search led me to the transformative power of a plant-based diet. I completely overhauled my relationship with food, trading processed ingredients and animal products for whole, nutrient-dense plants. The transformation was nothing short of a miracle from God. As I nourished my body with the right foods, my symptoms began to fade. I reclaimed my energy, my health, and my life. I realized that food is medicine, and I felt a profound, emotional calling to share this discovery with others. I knew I couldn’t keep this gift to myself while so many others were struggling with their own health battles. That passion is the heartbeat of Lauren’s Plant Based Kitchen. Every meal I prepare is infused with the same love and intention that healed my own body.
